Barkers started out by making
elderberry wine and have grown to be one of South Canterbury's
business successes. Pre-dating the grape as a source of wine,
for 2,000 years the elderberry has been used in Europe for medicinal
purposes. Barkers make a full range of pure berry fruit wines,
delicious jams, preserves, sauces, juices and condiments and
much more, exporting across the South Pacific and supplying many
restaurants. A Kavanagh House favourite is Barkers cranberry
sauce.
